The Betty is a handmade 7 tier artisan cheese cake consisting of:
St Bruce (Base)
also known as The Drunk, St Bruce has been given a regular drink of local Redemption Brewery’s Hopspur Beer to help create the coat. A mellow flavoured cheese, the texture is smooth and yielding.

Debs (2nd Tier)
Debs is a brand new cheese, made with the milk from gorgeous Jersey Cows. Texture is smooth, thick and creamy flavour medium with lemony overtone.

Napier (3rdTier)
Aged for 9 months, our own recipe, Napier is a hard cheese, slightly crumbly, yet creamy in texture with a slightly sharp flavour. A wonderful addition to any cheeseboard and perfect with a slice of rich fruitcake!

Alexandra (4th tier)
Alexandra, AKA Ally Pally White, is a semi hard artisan hand made cheese originally named after Alexandra Palace.
Aged for 10-12 weeks and made with amazing unhomogenized milk from grass - fed single herd cows, Alexandra, is rich, creamy and smooth textured cheese with buttery and nutty undertones.

Ellis (5th tier)
Some would call it an experiment; others would say its a designer cheese. This is a one off, made in a moment of anarchy by the cheesemaker who periodically ignores the rule book and makes something different - because he can! This months special is Ellis, a lovely young fresh, light yet robust, tangy Cheshire/Wensleydale like Cheese - perfect with biscuits and chilli jam!

Nash (top)
A small individual cheese, with a creamy texture, Nash’s flavour is buttery at first then developing a more mature aftertaste

Each of cheeses are handmade using the amazing milk from a single herd of Cows, Vegetarian Rennet, a little bit of salt and whole load of time, love and care.
To help make it easy on the day we also include seasonal fruits and complementary Membrillo for decoration.
Your wedding Cake Cheese will be dispatched to you wrapped and labelled for easy set up together with tasting notes. Add any green leaves or edible flowers as you wish and you are ready to go.
